This puff pastry pocket is a full meal in one package. Flaky, buttery crust. Seasoned beef. Sweet caramelized onions. Tender potatoes. Melty cheese. Make them for dinner. Make them for meal prep. Make extra.

Step-by-Step Instructions

1

Cook Potatoes

In a skillet over medium heat, cook diced potato in olive oil until tender (about 5-7 minutes). Remove and set aside.

2

Caramelize Onions & Cook Beef

In the same skillet, cook onion until soft and golden (5 minutes). Add garlic, cook 1 minute.

Add ground beef, paprika, salt, and pepper. Cook until browned (5-7 minutes). Drain excess fat.

Return potatoes to skillet. Mix well. Cool completely.

3

Preheat & Prep

Preheat oven to 400°F (200°C). Line a baking sheet with parchment.

Roll puff pastry slightly into a 10×12 inch rectangle. Cut into 4 equal squares.

4

Assemble

Place ¼ of the beef-potato mixture in the center of each square. Top with cheese.

Fold diagonally into a triangle or rectangle. Press edges with a fork to seal. Cut small slits on top.

5

Egg Wash & Bake

Brush pastries with beaten egg. Bake 18-22 minutes until puffed and golden brown.

6

Serve

Cool 5 minutes. Garnish with parsley. Serve warm. Watch them disappear.
