Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.

Roll puff pastry lightly on a floured surface. Cut into 12 circles (use a 3-inch biscuit cutter or glass).

Press each circle into a muffin cup, pressing up the sides.

Make Filling

Whisk eggs and cream in a bowl. Stir in cheese, bacon, spinach, green onions, salt, and pepper.

Pour filling into each crust, filling about ¾ full.
