Pork Souvlaki (Greek Skewers That Scream Summer)

Souvlaki is Greece’s gift to grilled meat. Pork cubes marinated in lemon, garlic, and oregano. Skewered. Grilled until charred. Wrapped in pita with tzatziki. One bite and you’re on a taverna balcony.

Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper. Add pork cubes. Toss to coat. Marinate 2-8 hours (overnight is best).

Make Tzatziki

Mix all tzatziki ingredients in a bowl. Refrigerate until serving.

Skewer & Grill

Thread pork onto soaked skewers. Heat grill or grill pan to medium-high.

Grill skewers 8-10 minutes, turning occasionally, until charred and cooked through.

Warm Pita

Warm pitas on the grill for 30 seconds per side.

Assemble

Spread tzatziki on pita. Add souvlaki (slide off skewer). Top with tomato, onion, and fries if using.

Fold like a taco. Eat immediately. Dripping is part of the experience.
