Step-by-Step Instructions

Make the Sauce

Whisk all sauce ingredients in a bowl. Set aside.

Prepare the Beef

Divide ground beef into 8 small balls (about 2 oz each).

Smash and Griddle

Heat a large skillet or griddle over medium-high heat. Add a little oil.

Place a tortilla on the griddle. Put a beef ball on top. Smash flat with a spatula until paper-thin.

Sprinkle with cheese. Cook 2-3 minutes until beef is crispy and cheese melts into the tortilla.

Flip and cook 30 seconds more.

Transfer to plate. Add pickles, onion, and a generous drizzle of burger sauce.

Fold like a taco.
